Pizza Damper on an open fire

I am not much of a cook, I like to follow a recipe but there is none of that when you are cooking in the bush. You don’t have measuring cups and spoons or know the temp of the oven so it is all a bit of guess work.

Pizza damper was something I had wanted to make for a while so on our recent camping trip I decided to give it a go. Adding a bit of this and a bit of that and putting it into the hot coals to cook. Must admit it turned out pretty tasty.

Pizza Damper Recipe

  • 2 Cups of self raising flour
  • 1 Cup water
  • 1 Tablespoon of sugar
  • 6 slices of salami (chopped)
  • Olives
  • Cheese

These measurements are roughly what I used to make the damper.

  1. Add flour and sugar to a bowl
  2. Add water and kneed the mixture by hand. If it is too sticky add more flour.
  3. Once it is the right consistency mix in the salami, olives and cheese.
  4. Roll the mixture into a ball, lightly dust in flour and cover with alfoil. I suggest doing 4-5 layers of alfoil
  5. Shovel a thin layer of coals to the side of the fire. Place the damper on top of the coals and then add more coals on top of the damper.
  6. It takes around 30 minutes to cook. Make sure you check the damper by sticking in a knife to see if it cook. If the knife comes out clean it is ready to eat.

  1. Yum, yum, yum! I’ve never tried to make damper using salami, olives and cheese. Sounds delicious, nothing like pizza by the fire! Will definitely try this, thanks! 🙂

  2. AH!!! I was needing some camp food inspiration over Easter, this would have been perfect! I might pin this for future reference. I love the idea of cooking in the fire and teaching my Vicklets about damper.

  3. I’ve never been game enough to make my own bread, especially while camping. Will have to give this a go on our next camping trip. I find cooking on camping trips a struggle too and usually make the same three things over and over.
